Arugula Pear Salad

  • Arugula
  • Pear - Bosc, Bartlett, or Anjou
  • Blue or Gorgonzola cheese or goat cheese
  • Candied walnuts or pecans 
  • Balsamic Vineagrette or champagne vinaigrette. 

Champagne vinaigrette 
  • 1/2 cup extra virgin olive oil
  • 1/4 cup champagne vinegar
  • 2 tablespoons honey
  • 1 tablespoon dijon mustard
  • 1/4 teaspoon sea salt or to taste
  • 1/8 teaspoon black pepper or to taste
