Mash the two bananas in a mixing bowl with a fork.
Add the cinnamon. After this, add flour and milk in turn, mixing until you've achieved your preferred pancake batter consistency. If it's feeling too dry, add milk. If it's feeling too wet, add flour.
Melt a little blob of coconut oil in a fry pan (medium heat) and cook your first pancake by spooning a dollop of batter into the pan.
Pro tip: My mum, a retired chef, always taught me to cook the first pancake on its own as a trial run, so that you can get a feel for the heat of the pan.
Cook the rest of your pancakes, flipping when there's lots of bubbles poking to the surface, and the underside is golden brown.
