Beef and kimchi stew

  • Beef (I used stew cut from local butcher) cut into cubes
  • Potatoes (cubed)
  • Kimchi
  • Korean chili paste (gochujang)
  • Paprika
  • Salt
  • Pepper
  • Olive oil

  1. Heat olive oil in deep sauce pan
  2. Add beef to pan and cook until medium well
  3. Add potatoes, kimchi, and add water until ingredients covered
  4. Cook for about 10 minutes
  5. Add about a tablespoon of paprika, and one tablespoon of gochujang
  6. Simmer about 30-40 minutes. Stirring occasionally.
  7. Cook until meat is tender and potatoes fall apart.

This was a heavily improvised recipe, with some leftover ingredients already available in my cupboard. Specific measurements aren't available yet, but I estimate about half a pound of beef, 4 potatoes, one cup of kimchi, and about a tablespoon of paprika and chili paste.
