Berbere spice mix

2 tablespoons cayenne pepper
5 teaspoons paprika
1 teaspoon whole coriander
1 teaspoon whole fenugreek seeds
1 teaspoon ground ginger
1 teaspoon ground cardamom
1/4 teaspoon ground nutmeg
1/4 teaspoon ground allspice
1/4 teaspoon ground cloves

  • Lightly roast coriander seeds and fenugreek seeds. Allow to cool and then grind.
  • Mix with the rest of the spices
  • Makes about 4 tablespoons
