Broccoli Pasta
Prep Time
Ingredients
Broccoli

Preparation
Start heating up water for pasta.
In a large frying pan, cook onions and peppers on medium/low heat while water heats up. If using garlic or butter, add these items a few minutes before the pasta finishes cooking. Add lots of fresh black pepper while onions cook.
Grate a large quantity of parmesan while pasta and onions cook.
When pasta has about 6 minutes of cook time left, add broccoli to the boiling pasta.
Cook until al dente and transfer the pasta and broccoli into the frying pan with your onion/pepper mixture. Use some of the boiling pasta water in your pan to create a starchy sauce. Turn the heat up as high as it goes and stir continuously for a minute until water evaporates and leaves pasta a nice consistency.
Remove from heat and add a handful of parmesan into the pan. Toss briefly and repeat with another handful or two of the parmesan so that the pasta is evenly coated with melted cheese.
Notes
Lots of onions and jalapeños, thinly sliced.
Lots of olive oil and crushed red pepper.
Lots of black pepper cracked fresh while the onions cook.
Add broccoli into the boiling pasta when there's about 6 minutes remaining.
I cook the onions and peppers on medium/low until the pasta is finished. This is how it looks after about 12 minutes of cooking.
Throw the pasta and broccoli directly into the cooked onions, along with some of the starchy pasta water. Turn the heat on high and stir continuously until pasta water evaporates. The pasta should be evenly coated in oil and spices.
Turn heat off and add a couple handfuls of parmesan. Toss several times to coat pasta in melted cheese.
The final consistency, ready to plate.
Plate the pasta and sprinkle with parmesan, salt, more pepper. Enjoy!
