Broccoli Pasta

  • Broccoli
  • Pasta
  • Onion
  • Parmesan
  • Olive oil
  • Salt
  • Pepper

Optional
  • Jalapeño or long hot peppers
  • Garlic
  • Butter
  • Chili flakes

  • Start heating up water for pasta.
  • In a large frying pan, cook onions and peppers on medium/low heat while water heats up. If using garlic or butter, add these items a few minutes before the pasta finishes cooking. Add lots of fresh black pepper while onions cook.
  • Grate a large quantity of parmesan while pasta and onions cook.
  • When pasta has about 6 minutes of cook time left, add broccoli to the boiling pasta.
  • Cook until al dente and transfer the pasta and broccoli into the frying pan with your onion/pepper mixture. Use some of the boiling pasta water in your pan to create a starchy sauce. Turn the heat up as high as it goes and stir continuously for a minute until water evaporates and leaves pasta a nice consistency.
  • Remove from heat and add a handful of parmesan into the pan. Toss briefly and repeat with another handful or two of the parmesan so that the pasta is evenly coated with melted cheese.
