cashew noodles

  • cashews
  • ginger
  • garlic
  • tamari or soy sauce
  • hot sesame oil (or chili + sesame oil)
  • lime/lemon juice
  • rice noodles
  • green onion

  1. roast cashews in pan or oven
  2. boil noodles
  3. chop ginger and green onion
  4. set aside some cashews for topping
  5. add rest of cashews, ginger, garlic, tamari, oil, lime/lemon juice, and about 1/4th cup hot water to blender. blend until creamy.
  6. put the cashews set aside earlier in a plastic bag and crush with a mug
  7. serve with crushed cashews, green onion, sesame seeds, and any raw vegetables (radish, carrot, cucumber, etc.)
