Coconut Kale

  • 1 can coconut milk
  • Kale
  • Large onion
  • Cumin, salt, red chili flakes
  • Extra virgin olive oil
  • Optional: additional vegetables (I used corn, jalapeno, and 3 small sweet peppers)
  • Optional: Coconut flakes (add coconut flavor)

  1. Cook the oil in a skillet over medium heat, add in onions and cook until translucent.
  2. Add in additional veggies if using and sprinkle with cumin, salt, red chili flakes. Cook for 5 minutes. Add in coconut milk.
  3. Add in kale and sauté until wilty
  4. Serve as side dish or as part of a burrito bowl
