Coconut Muffins

  • 6 large eggs
  • 4 tablespoons coconut milk
  • 6 tablespoons honey
  • 4 tablespoons butter, melted
  • 1/2 teaspoon vanilla extract
  • 1/2 cup sifted coconut flour
  • 1/4 teaspoon salt
  • 1/2 teaspoon baking powder

  1. HEAT oven to 400 degrees.  Prepare muffin pan with paper liners or grease
  2. WHISK the eggs, butter, coconut milk, honey, and vanilla extract together in a medium bowl.  In a separate bowl mix together the flour, salt, and baking powder.  
  3. STIR dry ingredients into wet ingredients until well mixed.  Be careful not to over mix.  
  4. POUR batter into the prepared muffin pan
  5. BAKE in the center of the oven for about 20 minutes.  Muffins are done when a toothpick inserted in the center of a muffin comes out clean. 
  6. COOL in pan on wire rack for 15 minutes.
  7. EAT
