Dijon salmon

2 lbs salmon
1/4 cup Dijon mustard
1 tbsp lemon juice
1 tbsp avocado oil
3 garlic cloves, minced
salt and pepper
2 tbsp of herb of choice (parsley, dill, cilantro)

Whisk together all ingredients 
Pour on top of salmon, skin down, and spread evenly on top. Let sit for 1 hour - up to 24 hours. 
Take salmon out of fridge 20 mins before ready to cook. 
Preheat oven to 375 degrees. 
Pour a little olive oil on a foil-covered baking tin. Place the salmon, skin down, on the baking tin.
Finely chop herbs and sprinkle over salmon.
Bake for 20 mins.
