Easy peezy focaccia

  • 3 cups all-purpose flour (I use a mix of coconut/chickpea)
  • 1 tablespoon active dry yeast
  • 1 teaspoon salt
  • 1 teaspoon sugar
  • 1 1/4 cups warm water
  • 1/4 cup olive oil
  • 1/2 cup pitted and chopped Kalamata olives
  • 1 tablespoon paprika
  • Additional olive oil, for brushing


  1. In a large mixing bowl, combine the flour, yeast, salt, and sugar.
  2. Add the warm water and olive oil to the dry ingredients and mix until the dough comes together.
  3. Knead the dough for about 5 minutes, until it is smooth and elastic.
  4. Cover the dough and let it rise in a warm place for about 1 hour, until it has doubled in size.
  5. Preheat the oven to 425°F.
  6. Grease a baking sheet or line it with parchment paper.
  7. Punch down the dough and press it onto the prepared baking sheet.
  8. Brush the dough with additional olive oil and sprinkle the chopped olives and paprika on top.
  9. Bake the focaccia in the preheated oven for about 20-25 minutes, or until it is golden brown and the edges are crispy.
  10. Let the focaccia cool for a few minutes before slicing and serving. Enjoy your homemade focaccia with olives, paprika, and olive oil!
