  • 2-3 small potatoes (cut up)
  • 2 bell peppers
  • 1 carrot
  • 1 large onion
  • 1 garlic clove (minced)
  • 1 scallion
  • Oregano, red chili flakes, salt, pepper
  • EVOO
  • Parsley (optional)


  1. Cut up all the veggies into small pieces. Heat olive oil in pan, once hot, sautee the onion.
  2. Add in garlic, cook for additional minute.
  3. Add in bell peppers, carrots, white part of scallion and potatoes.
  4. Season with oregano, red chili flakes, salt, pepper and cook until potatoes and carrots are soft and easy to bite into. Alternate between cooking with and without a lid.
  5. Serve with parsley or green part of scallion.
