Herbed Butter

  • ~ 1 tablespoon finely chopped fresh herbs.  I like to use rosemary and thyme
  • ~ 1/2 teaspoon fresh lemon zest
  • 1 stick of high quality salted butter
  • 1 sheet of parchment paper

  1. LEAVE the butter out until it's at room temperature.  This usually takes a few hours.  The butter should be soft enough to mix.
  2. MIX the fresh herbs and lemon zest into the butter until it's soft and well mixed.
  3. PLACE the mixed butter onto the middle of a sheet of parchment paper.
  4. ROLL the butter into a log shape and then refine the log by rolling it in the parchment paper.  
  5. CHILL in the parchment paper roll until ready to use.  The flavor really soaks in as it's cooling so I like to leave it in the fridge for an hour or so.

This tastes really good on sliced, grilled baguette.  I also use this on corn when I grill it on the bbq.  Serving it on baked sweet potato or regular potatoes is also a crowd pleaser!
