Kale Taco Salad

  • Kale
  • Corn
  • Cherry tomatoes
  • 1 Jalapeño 
  • 1 Apple
  • 1 Red onion
  • Cilantro
  • 2 Limes
  • Tortilla chips (optional)
  • Cheddar cheese (optional)
  • Fat-free Greek Yogurt
  • Extra virgin olive oil
  • Cumin, Salt, Pepper

  1. Heat EVOO and then cook red onion and jalapeño together. Mix in salt, cumin and pepper. Add in corn and cook a while longer until everything is soft and cooked through. Once cooked, transfer everything including left over oil into a large salad bowl.
  2. Wash the kale and remove from stems. Place in the salad bowl with onions, corn and jalapeño. Mix well, making sure to massage the kale with the oil so it softens.
  3. Half the cherry tomatoes, slice the apple and chop the cilantro – mix in with other vegetables in the salad bowl. 
  4. In a separate dish, mix the juice of 2 limes with salt and cumin until combined. Add in 3 large spoonfuls of fat free Greek yogurt. Mix until combined.
  5. Toss the salad with the lime yogurt dressing.
  6. Add in tortilla chips and shredded cheddar cheese if using.
