La Di Da Pasta

  • 6-8 garlic cloves, finely chopped
  • 1/2 of a lemon, juiced
  • Approx. 6 tbsp olive oil
  • Box of pasta of your choosing
  • Freshly grated parmesan cheese to taste
  • Salt and pepper to taste
  • 1-1/2 tspn red chili pepper flakes

  1. Finely chop garlic and place to the side
  2. Boil water in a medium/ large pot.  When water is boiling add pasta and cook as directed on box/package
  3. While pasta is cooking add about 2 tablespoons of olive oil in medium pan and heat on low-medium heat
  4. Add garlic and sauté until fragrant, but not too brown.  Turn off heat and add juice of 1/2 lemon.
  5. When pasta is ready make sure to drain well.
  6. When pasta is drained, add it back to the pot where you boiled the water.  Add the garlic and the oil that you sautéed it in.  Additionally, add the rest of the oil to sufficiently coat pasta.  At this point you can also add the red chili flakes.
  7. Grate parmesan cheese into pasta.  The amount you use really depends on how much you like cheese!  Mix all of the ingredients together until pasta is sufficiently coated and well mixed.  
  8. Plate and add extra cheese and red chili flakes.  You can also add salt and pepper to taste!

There is really a lot of room for tweaking in this recipe.  You can add as much or as little garlic as you like.  I happen to like garlic and cheese so I tend to be heavy handed with both.  You can also choose to squeeze a little extra lemon juice on the pasta once it's plated.  Enjoy!
