Milkless Quiche

1 pre-made 9" crust
5 eggs
1 1/4 cups almond milk
1 cup monterey jack cheese
5 strips chopped bacon
1/2c sliced leek
1/4c spinach
1/2 Tb of  salt to taste

  1. Whisk eggs with milk 2-3 minutes. 
  2. Precook your crust if frozen. These can swell if empty so fill with beans or pie weights if you have them.
  3. I nuke the leeks to soften them, also nuke the bacon separately til crispy.
  4. Grate cheese. Place cheese layer first into pie shell, then vegetables, lastly egg mixture. 

Bake 40 minutes at 350 degrees.
