Mom’s Lasagna Tomato Sauce

  • 3 tbsp. olive oil
  • 1 cup chopped onion
  • 1 cup chopped pepper
  • 1 tbsp. minced garlic
  • 2 tsp. basil
  • 2 bay leaves
  • 2 tsp. salt
  • Optional: 1 lb. Italian sausage

  • 1 13 oz. can tomato puree
  • 1 6 oz. can tomato paste
  • 2 tbsp. dry red wine
  • 1 cup freshly chopped tomatoes
  • 1/4 tsp. black papper
  • 1 1/2 cups freshly chopped parsley
  • Optional: 1/2 lb. coarsely chopped mushrooms
  • 1/2 cup grated parmesan

This recipe makes the sauce for Mom’s Lasagna.

Sautee in a large kettle:

  • 3 tbsp. olive oil
  • 1 cup chopped onion
  • 1 cup chopped pepper
  • 1 tbsp. minced garlic
  • 2 tsp. basil
  • 2 bay leaves
  • 2 tsp. salt
  • Optional: 1 lb. Italian sausage

When onions are clear and very soft, add:

  • 1 13 oz. can tomato puree
  • 1 6 oz. can tomato paste
  • 2 tbsp. dry red wine
  • 1 cup freshly chopped tomatoes
  • 1/4 tsp. black papper

Turn the heat way down, cover and simmer at least 45, stirring occasionally. Then add:

  • 1 1/2 cups freshly chopped parsley
  • Optional: 1/2 lb. coarsely chopped mushrooms
  • 1/2 cup grated parmesan
