Panko garlic mashed potatoes

  • 4 golden potatoes
  • 1 tablespoon of olive oil
  • 1/2 cup panko
  • 2 tablespoons of unsalted butter
  • 4-6 cloves of garlic
  • Salt and pepper
  • Dried basil
  • Optional: milk of choice

  1. Peel and cut potatoes into cubes
  2. In a deep sauce pan, bring salted water to a boil
  3. Once water is boiling, add potatoes
  4. Cook potatoes until soft (you should be able to pierce with a fork)
  5. Once potatoes are cooked, drain, set aside, and add butter
  6. In a separate shallow pan, add olive oil
  7. Add sliced garlic into pan and cook until crispy
  8. Transfer garlic to potatoes, but maintain oil
  9. In the same pan with oil, add panko and basil
  10. Cook panko crumbs until golden brown
  11. Once golden, add most (leave some to the side for topping) of the panko crumbs to potatoes
  12. Mash potatoes together until preferred texture (add optional milk of choice for a creamier texture)
  13. Add salt and pepper to taste
  14. When serving, add remaining panko to the top

I personally preferred my mashed potatoes to not be super creamy, so besides adding butter and the olive oil from the garlic, I didn't add any milk. If you like your mashed potatoes to be more garlicky definitely add more cloves!
