Pita Zeljanica (Spinach & Feta Pita)

  • filo dough (1 package, 1lb, 500grams)
  • 4 eggs
  • 600 grams feta cheese (1.5 lbs)
  • Parmesan or other cheese for "kick"
  • 4 bunches spinach
  • sparkling water
  • Salt & pepper
  • EVOO


  1. Take the filo dough out of the freezer/fridge
  2. Wash the spinach and remove the leaves from the stems (discard stems, keep leaves)
  3. Locate a large pot. In the pot, place the spinach and fill it with water. Bring this spinach and water mixture to a boil
  4. Once the spinach + water mixture boils, set a timer for 20-25 minutes. Reduce the flame to low/medium.
  5. In a separate bowl, break 4 eggs and whisk them together. Take the feta cheese and crumble it into the eggs. Mix the egg and cheese together and set aside.
  6. After 20-25 minutes have passed, drain the water from the spinach. Leave it in the sink/drainer until it cools off.
  7. Once it cools off, use a fork to knead the water out of the spinach.
  8. Once it has cooled off and the water has been removed, dump the spinach into the cheese/egg mixture. Mix them together until well combined. Add salt and pepper to the mix. (Optional) add a "special ingredient" to kick it up a notch. I usually grate parmesan cheese over it, but my mom likes to use sour cream.
  9. Set your oven to 350 degrees.
  10. Grease a glass pan (about 13 x 9inches) with olive oil and then wash your hands.
  11. Open the packaging of filo dough and expand it on a flat surface
  12. Take 4-5 sheets of the filo dough and place it into the greased glass pan.
  13. Using a spoon or a fork, drop some of the spinach/egg/cheese mixture in the center of the sheet. spread it around so that it is fairly evenly spread. Fold the edges of the filo dough into the pan (not shown in photo).
  14. Take 3 sheets of the filo dough and place them on top of the previous row and repeat step 13.
  15. Repeat step 14 until you run out of the spinach/egg/cheese fill. Add a little olive oil to the edges of the pan every other row.
  16. Once you get to the end of the spinach/egg/cheese fill, add 5 sheets of the filo dough to the top of the pie. Add a little olive oil to the edges of this set, too.
  17. Take a small glass of sparkling mineral water (about 100 grams) and dump it over the pita to christian it!
  18. Place the pita into the oven and cook for 45 to 50 minutes. Look out for an appetizing golden color.
  19. Remove from the oven and cover with a clean rag. Wait for it to cool off and then serve it.
  20. If there is pita left over, keep it out at room temperature, covered with a clean rag.
