Plantains with Peanut Sauce

  1. 1-2 ripe plantains (they'll have brown spots)
  2. Coconut oil
Peanut Sauce

  1. 3 Tbl Peanut Butter
  2. 3-4 Garlic Cloves chopped ( place in microwave for ten seconds)
  3. ½ tsp Soy Sauce
  4. 2 tsp Water or Lime Juice
  5. Dash Hot Sauce (Gochujang or Sriracha chile)


  1. Prepare sauce; mix peanut butter with soy sauce, water and/or lime juice til you get a smooth consistency. I dehydrate the garlic in the microwave for 10 sec to remove the raw bite, then chop. Add hot sauce to taste.
  2. Peel and cut the plantains into 1/2" slices
  3. Heat oil on pan- I like the results from cast iron pan.
  4. Cook plantains until golden brown on both sides. I flip them with a fork.
  5. Remove from heat and drain on paper towels
6. Serve with sauce on the side, this combines with a protein.

Note: This is a Dominican-Peanut Satay hybrid, I guess
