pretzels

dough:

  • 2 1/2 cups bread flour
  • 1 tsp salt
  • 1 tsp sugar
  • 1 packet active dry or instant yeast
  • 1 cup warm water
topping:

  • coarse salt
  • butter
  • baking soda

  1. mix all dough ingredients in bowl until fully combined
  2. knead dough for 5-8 minutes
  3. transfer dough to lightly greased bowl (just oil the bowl you mixed the dough in) and let rise for 30 mins to 1 hr
  4. pour boiling water into a 9" square pan (or similar) and add baking soda and mix until soda is dissolved. let cool to lukewarm or cooler
  5. preheat oven to 475 F and prepare baking sheet with parchment paper or grease
  6. divide dough into 8 pieces and let rest for 5 minutes
  7. make into pretzels
  8. put pretzels in baking soda water and leave each pretzel for 2 minutes to soak
  9. bake for 8-9 minutes or until golden brown
  10. brush with melted butter and top with coarse salt
