Proja (Cornbread)

  • 1 1/3 cups all purpose flour
  • 1 1/3 cups corn flour
  • 4 whole eggs
  • 2 cups milk (I used almond milk)
  • 2/3 cup extra virgin olive oil
  • 1 tbsp baking soda
  • 200 grams crumbled feta, you can also mix in another cheese such as parmesan, blue cheese, gorgonzola
  • basil, swiss chard, or baby spinach leaves
  • .5 to 1 tablespoon salt

Set Up
  • One small glass baking dish (8" x 4") or a muffin sheet

  • Preheat oven to 350 degrees
  • Mix all the ingredients in one bowl
  • Prepare the baking pan – oil the pan with the oil and then put it in the oven (with nothing inside of it other than the oil).
  • Carefully with oven mitts, remove the dish and pour the ingredient mixture into the hot oil pan. You'll know the oan is hot enough if it starts steaming. Use a spatula to clear off the edges. The batter should be thicker than crepe batter. Place the dish back into the oven.
  • Bake for 30 minutes. If it's not golden brown, cook for a maximum of 40 minutes.
