Samosa-dilla (Dad’s recipe)

  • Frozen peas (soak in hot water before using!) 
  • Aloo (Potato)
  • 1 tsp Cumin 
  • 1 tsp Coriander 
  • 1/2 tsp Turmeric
  • Red chili powder (or cayenne)
  • Ginger finely chopped (1/2 inch per Idaho potato)
  • Onion finely chopped (1/4 per Idaho potato) 
  • Jalapeño, chopped 
  • 1/4 tsp Chaat Masala (can try with Garam Masala)
  • Something sour (lime juice works)
  • Salt
  • Sugar
  • Flour tortillas

  1. Boil potatoes for 5 minutes, chop into cubes
  2. Heat up little bit of oil (depends on how much you want to make)
  3. Fry onion (don’t brown), put in ginger, chopped jalapeños, teaspoon of red chili powder
  4. Add cumin, coriander,  turmeric, garam masala, fry it up 
  5. Add potatoes, cook potatoes with masala 5-6 minutes, cover over low flame until potatoes start melting 
  6. As soon as potatoes break down, put peas in. Mix everything together.
  7. Add coriander, Lime juice, Salt, pinch of sugar, mix. 
  8. Make a quesadilla using the filling, cut into triangles, and crisp it up on the stove!
