Spicy Leek Pita

  • filo dough
  • 8 leeks
  • EVOO
  • 2 jalapeños
  • 2 eggs
  • sparkling water (non flavored, unopened)


Before You Begin
  1. Remove the filo dough from the fridge.
  2. Preheat oven to 350 degrees.

Filling
  1. Peel and slice the leeks
  2. Slice the jalapeños
  3. Heat EVOO in pot and then cook leeks and jalapeños together until soft and pliable. Season with whatever you want. (My mom uses Vegeta but I prefer salt, pepper, turmeric, nutmeg and chili flakes).
  4. Remove from heat. This is your filling.
Assembly
  • Grease a 9x13 glass baking pan with EVOO (not too much)
  • Place 4 sheets of the filo dough at the bottom of the baking pan. Then add some of the filling, then add 3 layers of the filo dough, then add some of the filling, then 3 layers of the filo dough until the end. Place 4 sheets of the filo dough at the top (more at the bottom and more at the top, but 3 in between throughout).
  • Cut the pita lengthwise and across.
  • In a small bowl, mix 2 eggs and sparkling water.
  • Pour this over the pita so it goes through the cuts. 
  • Place in the oven for 40-45 minutes
  • Once it's done, remove from the oven and cover with a moist rag until it cools off.
