Thit Kho (Insta Pot)

  • 1 lb pork belly 
  • 1 lb pork shoulder
  • 2–3 shallots
  • 4–5 cloves of garlic
  • 2 tablespoons of brown sugar
  • 3 tablespoon fish sauce
  • 1 tablespoon dark soy sauce
  • 1 teaspoon chicken bouillon
  • 2 cups of coconut soda
  • 8–10 eggs

  1. Finely chop shallots and garlic. Slice pork into smaller chunks. Make rice. 
  2. Sauté shallots, garlic, and pork with brown sugar. 
  3. Then add coconut soda, fish sauce, dark soy sauce. Could use water or coconut water if no coconut soda. Cook on insta pot for 20 minutes on high.
  4. While that’s cooking, boil eggs and peel them. Slice green onions and thai chili.
  5. Quick release the insta pot, then do sauté mode for ~10 minutes to reduce some liquid. Can add the green onions and chili at this point 
Serve with white rice!
