Via Carota’s Salad Dressing

  • 1 large shallot, minced
  • 2 tablespoons + 1 teaspoon aged sherry vinegar
  • 1 tablespoon warm water
  • 1 cup extra virgin olive oil
  • 1.5 tsp Dijon mustard
  • 1.5 tsp whole-grain mustard
  • 1.5 tsp honey (optional)
  • 2 sprigs thyme, washed and stripped
  • 1 large clove garlic, finely grated
  • Salt + freshly ground pepper

  1. Rinse minced shallot with cold water in mesh strainer. 
  2. Add shallot to medium bowl with 2 tbsp sherry vinegar and 1 tbsp warm water. Let sit for 2 minutes
  3. Whisk in 1 cup EVOO, 1.5 tsp Dijon mustard, 1.5 tsp whole grain mustard, 1.5 tsp honey (optional), 2 sprigs thyme, 1 large grated garlic, and a large pinch of salt. Adjust with more vinegar or salt as needed.
